Students will use an emulsifier (egg yolk) and create the first steps in making Mayonnaise. This lab does not complete the entire process of making Mayonnaise because I do not have the ability to pasteurize eggs in my room, but you can complete the steps if your lab facility has that ability.
 
This product can be purchased on its own OR you it comes as part of the Food Science Semester
 
Objective
  1. Students will be able to explain the importance of emulsion and its purpose.
  2. Students will be introduced to food science.
